Tondonia Blanco

Marlon Toro is the Head Sommelier and Manager at The Bazaar by Jose Andres. His perfect wine choice for the summer will always be Tondonia Blanco by the Famous house of Lopez De Heredia located in the heart of Rioja in Spain. This wine is aged with minimum 6 years in barrel and then furthermore aged in bottle until perfection. “On the nose you will smell tart lemon balanced out with hazelnuts and a touch of oxidation. And on the palate, great acidity and light tannins. Talk about refreshing! This wine is perfect; not only does it drink great on its own, but it's a perfect pairing for fresh seafood such as oysters, grilled sardines, and Mediterranean sea bass."

Marlon Toro is a graduate of Florida International University School of Hospitality Management with a Bachelor of Science degree in Hospitality Management, focusing on Restaurant Management. Since the age of 14 he has worked in the Hospitality Industry, starting as an entry level dishwasher. Throughout the years, he has held various job titles in hospitality such as “Back of the House,” “Front of the House,” to management positions. Marlon currently works as The Head Sommelier and Manager at “The Bazaar by José Andrés” located in the SLS South Beach hotel. The

Bazaar by James Beard Award-Winning chef José Andréslights, up Miami with a vibrant mix of sophisticated cuisine and playful indoor-outdoor space by Philippe Starck. His job consists not only as the Sommelier for the restaurant but also as a manager for the front of the house operations. His passion is mentoring the staff alongside developing an award winning wine list that people of all likes can enjoy. Marlon also assists and influences The Bazaar’s sister property in Miami, Bazaar Mar, at the SLS Brickell.
